The Ingredients:
  • Half tablespoon canola oil
  • Two cups chopped onion
  • Half cup chopped celery
  • 1⁄4 teaspoon salt
  • Two tablespoons all purpose flour
  • Two 12 fluid ounce cans evaporated skim milk
  • Two cups fat-free, reduced sodium chicken stock
  • One 16 ounce can fresh crabmeat, rinsed and drained
  • Two cups frozen sweet corn
  • Two bay leaves
  • 1⁄8-1⁄4 teaspoon cayenne pepper
  • One teaspoon Old Bay seasoning
  • One tablespoons dried chopped chives
  • Fresh ground pepper, to taste
