  • Three small tomatoes (chopped)
  • Two cups cooked brown rice
  • One cup frozen corn (thawed)
  • One small sweet onion (chopped)
  • 1/3 cup chopped ripe olives
  • 3/4 cup cubed Monterey Jack cheese
  • Four fresh basil leaves (thinly sliced)
  • 1/3 cup canned black beans (rinsed and drained)
  • 1/3 cup canned red beans (rinsed and drained)
  • 3/4 cup meatless spaghetti sauce
  • Three garlic cloves (minced)
  • Four tablespoons grated Parmesan cheese (divided)
  • Half teaspoon pepper
  • One teaspoon salt
  • Six large sweet peppers
  • Half cup water

  1.
